Native to Moluccas, or The Spice Islands of Indonesia, Nutmeg is a spice made from the seed of the nutmeg tree Myristica Fragrans. This evergreen is the source of both nutmeg and mace. Nutmeg is the inner seed, while mace is the red, lace-like substance that covers the seed. With a warm, spicy aroma, Nutmeg is popular in both sweet and savoury cooking. Its sweet, aromatic flavour makes it a good companion of custards, eggnog, curries, and onion-based sauces. Another common variety, ground nutmeg, can be made by simply grinding these nutmeg seeds.

Native to India and Indonesia, Pippali or Indian Long Pepper is a fruit from a flowering vine in the family Piperaceae. It is one of the most precious herbs in Ayurveda and Indian cuisine. While a true pepper, it has a pungent taste that is deeply aromatic and energizing. Pippali makes it a good companion of poultry, fish, vegetable stews and dals.
Not unlike coriander, the Yellow Mustard Seed is a very versatile spice. It can be toasted to be added to dishes, used for pickling, or ground to make mustard condiments. Mustard has warm earthy tones with a nutty complexion, and is a superb meat companion, especially poultry. It has a very short lifespan, though. It loses its potency quickly, so best to buy whole and toast and grind as needed.
Star Anise is a spice made from the Chinese evergreen Illicium Verum. Appropriatedly named for its star-shaped pods, Star Anise has a pungent, licorice-like sweetness that makes it an essential element in Chinese Five Spice, where it's combined with fennel, cinnamon, Szechuan peppercorns and cloves.
